This 2016 Merlot is from Curicó, Chile and was fermented in stainless steel and unadulterated by oak producing a merlot to remember! In addition to chocolate, it has subtle notes of cherry and plum and pairs well with your favorite steak or cheese – or BOTH!
The softer tannins in the Apila merlot really enhance the flavors in a lean cut of steak like the sirloin. When topped with this creamy blue cheese butter it’s a meal you won’t soon forget!
Perfect for your next dinner party or date night, you can also marinade the steak and freeze ahead of time for convenience.

When I set out to make this recipe, we actually ended up with gorgonzola instead of blue cheese (that’s a story you will hear very soon as well, don’t worry!) and I didn’t realize it until it was too late to run to the store. What I learned was that this recipe was equally delicious with gorgonzola, so don’t be afraid to mix it up a little bit with you favorite soft cheese!

Recipe : Steak With Blue Cheese Butter

Prep Time: 10 mins
Cook Time: 20 mins
2 pounds sirloin steak
1 tablespoon Roasted Garlic Grapeseed Oil
1 tablespoon Rancher Steak Rub
6 ounces blue cheese
2 tablespoons unsalted butter softened
1/4 cup panko bread crumbs
If prepping and freezing ahead – Add steaks, Roasted Garlic Grapeseed Oil, and Rancher Steak Rub to a freezer bag and seal. Squeeze bag to combine ingredients. Freeze.
Thaw meat completely before following the recipe. Preheat grill to high heat. Clean and grease the grill grates.
Mix blue cheese, butter, and bread crumbs together.
Grill steaks for 5-6 minutes on each side until cooked to desired doneness: 130°F for medium rare.
Remove steaks from grill and spread blue cheese butter on top of steaks. Broil or grill steaks for 3-5 minutes more until cheese melts and begins to brown.
Serve with the side dish of your choice!
