Fall is in full swing, and the rich aromas of the season are in the air. And, if you read my last post about fall flavors, you know how happy that makes me! In fact, that post also gave you a little sneak peak of today’s recipe, and my inbox has been going crazy for the details! So here it is, the pumpkin cardamon pasta bake recipe!

Great news for all the busy moms out there, this is one of the simplest recipes you’ll see! Four ingredients, no fancy techniques, just simple deliciousness!
The recipe as it stands is gluten free, low carb, and freaking delicious! In our search for healthier, alternatives we found Palmini Low Carb Pasta and became just a little obsessed. All the texture of regular pasta, and uber low carb count. You can have guilt free seconds, or even thirds! We couldn’t find any locally, so we ordered a case through amazon.
However, if you want all the gluten in your life it’s an easy swap for your favorite kind of pasta. Linguini or penne would both work great.
This time of year I usually find myself drifting back to my trusty red friends, but this white in particular was made to be a fall staple with it’s toasty essence. With tones of oak and hints of pear, it is perfectly balanced to pair with this dish that also flirts with the line between sweet and savory.
While we enjoyed this on just another Saturday, it was would make an awesome Thanksgiving side dish and a compliment to any menu. The pumpkin cardamom sauce is seasonal, so be sure to grab a jar (or 3) before it’s too late!

Recipe : Pumpkin Caradmom Pasta Bake
Prep Time: 10 mins
Cook Time: 30 mins
Servings: 4-5
Ingredients
1 (1 lb. 9 oz.) jar Whole Foods Market Organic Pumpkin Cardamom Pasta Sauce
Directions

Brown sausage in Cast Iron Skillet
until cooked through. Preheat oven to 350 degrees.

Rinse Palmini noodles well, boil in water for 10 minutes. Drain

Toss noodles, sausage, pasta sauce, and half the cheese. Return to cast iron skillet and top with remaining cheese. Can be cooked in a casserole dish if desired.

Bake for 20-25 minutes at 350 degrees.
