In a nod to the Pairings and Parenting one month anniversary and the upcoming holiday, we wanted to bring you a fun pairing that puts a new twist on the traditional St. Patty’s Day staple Corned Beef!

This 2016 Malbec comes to us from Mendoza, Argentina. While Malbec was traditionally a grape from southern France, it flourished when it found a new home in Argentina. The result is a flavorful, versatile wine that pairs well with many types of cuisine like pasta, steak or duck.
Because Malbec has softer tannins than some of its red counterparts, it is a perfect match for your next dinner party as it lends its flavor to each different dish and course.
The horseradish and corned beef combination in this recipe make it the perfect addition to any St. Patty’s Day event menu, and doesn’t take much prep time at all!

Recipe : Corned Beef Potato Bites

Prep Time: 15 mins
Cook Time: 25 mins
12 small red potatoes
2 tablespoons sour cream
1/4 cup low fat milk
1 teaspoon Horseradish Dill Blend
1/2 cup cooked diced corned beef
1/4 cup shredded cheddar cheese
Preheat oven to 400 degrees F.
Add potatoes to a large saucepan and cover with water. Bring to a boil and cook for about 10 minutes or until tender. Drain and cool.
Cut each potato in half. Cut a small slice off the rounded end of each half so they will sit on their own. Scoop out the insides of the potatoes and place in a mixing bowl.
Mash potato with sour cream, milk, and Horseradish Dill Blend. Fold in corned beef and shredded cheddar. Fill potatoes with the filling.
Bake for 10-15 minutes or until heated through and cheese is melted. Top with sour cream and chives if desired.
