This is a delicious and spicy twist on fish tacos paired with a refreshingly light sauvignon blanc that will rock your dinner table any day of the week!

This dreamy pale wine comes to us all the way from La Mancha, Spain. The first thing you are likely to notice is the scent of golden raspberry, which is accented in flavor with floral notes and a hint of white pepper. The clean and direct nature of this wine makes it a great pair for many preparations of white fish, and a great balance with the sweet and spicy tastes brought by these tacos! We kicked up the spice, so it was a great pair to cool things back down in between bites.
I was surprised at how quickly these tacos were assembled! The thing that took the longest was chopping the ingredients for the salsa, which you can totally eliminate if you purchase pre-chopped onions and mangoes for a ridiculously quick prep! If you decide to go at the mangoes on your own, I recommend checking out this tutorial on how to cut them. I definitely found that it was harder than I expected and I ended up wasting a good amount and my mango pieces were not pretty! It was still delicious so no complaints, but if I were serving to guests I would want more uniform (and not hacked) pieces.
I also made guacamole with this, because… well duh, because GUACAMOLE IS DELICIOUS! So I’ll be sharing my recipe for super easy three ingredient guac as well! Technically it is two ingredients, but I add a super secret bonus ingredient that takes it to a WHOLE NOTHER LEVEL! But seriously, this guacamole is so easy, just add the mix to mashed avocados and BAM, done! I’ve eaten right after mixing because I am impatient, but the flavors develop so much if you can stand to wait an hour or two to eat it after preparing.
What is this SUPER SECRET BONUS INGREDIENT YOU ASK? It is my favorite hot sauce in the entire world, HazMat! If you have been following me on personal page for awhile, you’ve seen me use it on everything from eggs to sweet & spicy orange glaze ribs over the years!
When I was putting this recipe together, I knew this would be the ultimate kick to add to this recipe since it was already such a great play on the balance between sweet and spicy. Recipe : Cajun Fish Tacos

Prep Time: 10 mins
Cook Time: 5-10 mins
Servings: 4
Ingredients
2 mangoes, peeled and diced
2 teaspoons lime juice
3 tablespoons red onion, finely diced
2 teaspoons chopped cilantro
1 pound large Mahi-mahi into bite-size pieces
1 1/2 tablespoons Cajun Seasoning
1 tablespoon Natural Grapeseed Oil
8 (6-inch) corn tortillas
Directions

In a bowl combine the mangos, lime juice, red onion, and cilantro. This is where I also added in a few dashes or HazMat Hot Sauce, add a little and taste – add more to your desired heat level. Season with salt and pepper if desired; set aside.

Toss fish with Cajun Seasoning and Grapeseed Oil. Grill fish or cook in a skillet over medium high heat until fish is cooked through and flakes easily with a fork.

Serve fish on tortillas with mango salsa.

Ingredients
2 avocados
4 1/2 teaspoons Guacamole Seasoning
1-2 teaspoons HazMat Hot Sauce
Directions

Mash avocados and combine all ingredients. Cover and chill for 2 hours before enjoying.
