Busy Mom Breakfast : Egg Casserole 3 Ways!

This will be the first in a series from Laura as we bring you her Top 5 Busy Mom Kitchen Hacks! Today we bring you Busy Mom Breakfast. I’ll turn it over to Laura for this one!

We all know starting our day and sending our kids (and hubbies) out the door with a good, healthy breakfast in their bellies is super important. Protein keeps you full longer, so eggs are a great option! But, even making eggs everyday can be time consuming – not to mention having to wash the pans. You’ll come to see a trend with me, making things as EASY as humanly possible! I’m sharing with you my solution for busy mom breakfast made easy!

Awhile back I started prepping an egg casserole on Sunday evenings, and then just heating it up in the mornings the rest of the week. It has made mornings a breeze!

For this busy mom breakfast, I start with a full size 9×13 Pyrex pan like this one (even has a lid for easy storage). I whisk 1 dozen eggs (or whatever random number I have in the fridge, no need to be exact with this recipe!) and about 1 cup of milk of your choice. I sauté some veggies and cook some breakfast meats, adding whatever seasonings I’d like. Then, add it all to the casserole dish, and pour the egg/milk mixture on tope and sprinkle with some cheese! Bake at 350º for about 30 minutes, or until the eggs are set.

You can even change up the casserole fix-ins weekly so you don’t get bored, and it’s so easy!

A Few Bonus Tips:

  • The great thing about this “recipe” is that it’s really hard to mess up – as long as you have eggs and some kind of milk, you can really add any combo of veggies, meats, and cheeses!
  • You can use liquid egg, liquid egg whites, or egg substitute for another quick shortcut
  • I use unsweetened plain Almond Milk as a dairy alternative, but you can use whatever your family likes! Regular milk is great too.
  • You can “bulk up” the recipe by adding a bag of frozen hash browns to the bottom of the pan, and pour everything over it.
  • You can use leftover meat you may have too! Leftover taco meat is a great addition!!
  • My husband likes to put a piece of the casserole between a toasted english muffin to make a quick breakfast sandwich.
  • We LOVE Applegate products – their bacon, turkey bacon, and breakfast sausages are fantastic – Gluten, Nitrate, and Casein free, so you can feel good about what you’re feeding your family!
  • For a smaller option for just one or two people, you can easily halve the recipe and use a 8×8 or 9×9 casserole dish.
